Gluten free coconut biscuit recipe

These healthy gluten free coconut biscuits add a little extra zing with the coconut, are not too sweet and perfect for that savory taste you want! Perfect for gluten free, dairy free , vegan and vegetarians! Let your kids have fun squishing them down with a fork!

Recipe:

Ingredients:

50 grams – Coconut Oil

50 grams – Desiccated Coconut

30 grams – Syrup

100 grams – Green Banana Flour

100 grams – Brown Sugar

2 Tablespoons – Water

1 Tablespoon – Sunflower Seeds

1 Tablespoon– Sesame Seeds

 

Method:

1)    Preheat the oven to 190°C

2)    Put baking paper on a baking tray

3)    Mix all ingredients into a bowl

4)    Beat on medium speed for 5 minutes until it comes together as a dough, if it is too dry and crumbly add 1 tbsp more water.

5)     Divide dough into small balls (about a tsp of mixture per ball) and put on the baking paper in the baking tray

6)    Squish balls of dough down with a fork (if it sticks dip the fork into sugar)

7)    Bake in preheated oven for 10 - 12 minutes

8)    Take out of the oven and cool on a cooling rack.
